Black Bean Salad Recipe

This black bean salad recipe has some popular ingredients added such as corn and tomatoes.

I used grape tomatoes for the salad pictured above as my local grocer didn't have any cherry tomatoes at the time.

Adding fresh cilantro is typical in a black bean and corn salad, but I prefer to buy the refrigerated paste for convenience sake.

The dressing is a very simple oil and lemon/lime juice marinade. It has a fresh tangy citrus flavor and is quite light.



Ingredients:

1 can black beans
1 can kernel corn
1/4 cup chopped red onion
1 stalk chopped celery
8-10 cherry or grape tomatoes
2/3 cup chopped feta cheese
1 clove garlic-minced
3 tsp. cilantro paste
1 tsp. oregano
1 tsp. salt

Dressing:

2 tbsp. olive oil
1 tbsp. lemon juice
1 tbsp. lime juice

*Empty cans of black beans and corn into a colander and rinse under cold water.

*Cut tomatoes in half(cherry) or thirds(grape) and gently squeeze out seeds.

*Mix dressing in the bottom of a large salad bowl.

*Add all other ingredients to bowl and gently mix.

*Cover salad and refrigerate overnight. Stir again before serving.
