Black Bean Salad Recipe
"A tangy citrus dressing makes this black bean salad recipe a little different than most."
This black bean salad has some popular ingredients added such as corn and tomatoes. I used grape tomatoes for<<>> the salad pictured below as my local grocer didn't have any cherry tomatoes at the time.Adding fresh cilantro is typical in a black bean and corn salad, but I prefer to buy the refrigerated paste for convenience sake. The dressing is a very simple oil and lemon/lime juice marinade. It has a fresh tangy citrus flavor and is quite light.
Ingredients: 1 can black beans 1 can kernel corn 1/4 cup chopped red onion 1 stalk chopped celery 8-10 cherry or grape tomatoes 2/3 cup chopped feta cheese 1 clove garlic-minced 3 tsp. cilantro paste 1 tsp. oregano 1 tsp. salt Dressing: 2 tbsp. olive oil 1 tbsp. lemon juice 1 tbsp. lime juice
*Empty cans of black beans and corn into a colander and rinse under cold water. This helps to reduce the sodium content as canned beans are generally very high in sodium. You can use dried black beans rather then canned if you prefer-you just have to soak then in water overnight. *Cut tomatoes in half(cherry) or thirds(grape) and gently squeeze out seeds. *Mix dressing in the bottom of a large salad bowl. *Add all other ingredients to bowl and gently mix. *Cover salad and refrigerate overnight. Stir again before serving.
