Black Bean Salad

Close window to return to site or click Here.Ingredients: 1 can black beans 1 can kernel corn 1/4 cup chopped red onion 1 stalk chopped celery 8-10 cherry or grape tomatoes 2/3 cup chopped feta cheese 1 clove garlic-minced 3 tsp. cilantro paste 1 tsp. oregano 1 tsp. salt Dressing: 2 tbsp. olive oil 1 tbsp. lemon juice 1 tbsp. lime juice
Empty cans of black beans and corn into a colander and rinse under cold water. Cut tomatoes in half(cherry) or thirds(grape) and gently squeeze out seeds. Mix dressing in the bottom of a large salad bowl. Add all other ingredients to bowl and gently mix. Cover salad and refrigerate overnight. Stir again before serving.
