Broccoli and Cucumber Salad

This broccoli and cucumber salad has a Greek flair to it. For the dressing I would use olive oil but any salad oil will do. This salad is a great barbeque dish and complements any grilled meat or seafood.

Ingredients:

1-2 bunches broccoli
1/2 long english cucumber
1/2 cup chopped red onion
1 bell pepper-chopped
1/2 cup crumbled feta cheese
1 small can sliced olives-drained of water

Dressing:

1/2 cup salad oil
2-4 tbsp. wine or cider vinegar
1/2 tsp.oregano
1/2 tsp. celery seed
1/2 tsp. salt

Cut up broccoli flowerettes into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes.

Add all other ingredients.

Add dressing to salad and refrigerate for 2-3 hours, stirring occaisionally.

Before serving, toss salad again and drain off any excess dressing.
