Broccoli Apple Salad

"For this broccoli apple salad recipe I have included 2 options for dressing."



I always like adding apples to salads. They just seem to go with almost everything. <<>>

Although any type will do I usually try to use a "green" apple like the Granny Smith or Golden Delicious as they have a tart, crisp flavour.

When making the salad chop and add the apple last after you have added the dressing, mixing it in immediately so the flesh will stay its natural colour.
The creamy dressing can be made with yogurt rather than mayonnaise, or mixed 50/50. You might try a fruit flavoured yogurt as well such as apple or lime...

You can use any vinegar for either dressing if you don't have any apple cider vinegar. Wine and rice(sushi) vinegar will work just as well. You can use lemon or lime juice as a substitute if you need to.

You can also use any bottled dressing or vinegarette dressing if you would rather not make one. This is sometimes the easiest option, especially if you are in a hurry.

Ingredients:

1-2 bunches broccoli
1/2 cup purple onion
1/2 cup raisins
1 apple
6-8 slices bacon(optional)

Dressing-Creamy:

1 cup mayonnaise
1/4 cup sugar
1/4 cup apple cider vinegar

Dressing-oil/vin:

1/2 cup salad oil
1/4 cup apple cider vinegar
1/4 cup sugar
1/4 tsp. dry mustard
salt and pepper to taste

*If using bacon, cook it until crispy,crumble it and set it aside.

*Chop broccoli flowerettes and onion into small pieces and put in salad bowl. Cut up enough for about 4 cups of flowerettes.

*Add raisins and your choice of dressing to the bowl and mix well.

*Chop apple and mix pieces into salad immediately so they are coated with dressing to avoid browning.

*Refrigerate salad for a few hours before serving.

*If using crumbled bacon, add just before serving.
