Broccoli Bacon Salad
"A broccoli bacon salad is just a great way to eat bacon!"
A broccoli bacon salad may not sound like a very healthy dish to make but don't let the bacon scare you away just yet-it's cooked well done and crumbled to avoid most of the fat.<<>> When I make this I usually use back bacon fresh from the butcher rather than the usual bacon from the grocery stores which is mostly fat and other things I don't want to think about. There are other healthier ways to eat bacon such as buying uncured, center cut and reduced sodium bacon. You can also get turkey bacon or even vegan no meat bacon as well. The main thing to consider when making a broccoli raisin bacon salad is that the bacon will get soggy if undercooked and added to the salad too soon before serving.
1-Broccoli Raisin Bacon Salad
Ingredients:4 cups broccoli flowerettes 1/2 cup red onion or 2-4 green onions 2 celery sticks 1/2 lb. bacon 1/2 cup raisins 1/2 cup chopped nuts or sunflower seeds(optional) Dressing: 1 cup mayonnaise or mix 50/50 with yogurt 1/4-1/3 cup vinegar or lemon juice 1/4 cup sugar or sweeten to taste
Any bottled dressing could be substituted such as Bacon Ranch. Fry, drain and crumble bacon and set aside. Chop broccoli flowerettes,onion and celery and add to bowl. Add all other ingredients except bacon, mix well and refrigerate for at least 2 hours. Add crumbled bacon just before serving.

2-Broccoli Cheese and Bacon Salad
This broccoli cheese and bacon salad can be made with any cheese you like. If you don't want to make the dressing you can use any bottled variety. 3-cheese ranch is a good option. Ingredients: 1-2 bunches broccoli 1 cup shredded cheese-any kind 1/2 cup raisins 1/3 cup red onion 6-8 slices bacon 1/2 cup nuts or sunflower seeds
Dressing: 1 cup mayonnaise 1/4 cup vinegar 2-4 tbsp. sugar Fry bacon until crispy, crumble and set aside. Cut up broccoli flowerettes into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes. Mix with cheese, onion, raisins and nuts. Add dressing, toss salad and refrigerate 2-3 hours. Add crumbled bacon and toss salad again just before serving.
