Broccoli Cashew Salad

A broccoli cashew salad is a really flavorful crunchy salad. Keep the cashew pieces fairly large-halving them works well.

This way the flavor of the nut stands out and can be easily tasted.

Here are two different versions of a this salad:

The first recipe includes raisins and bacon and the standard dressing normally used for a broccoli salad.

The second recipe has a more exotic flavour to it using mandarine oranges and a less sweet more tangy dressing.

1-Standard Recipe

Ingredients:

4 cups broccoli flowerettes
1/2 cup red onion
6 slices bacon
1/2 cup raisins
1/2 cup cashews

Dressing:

1 cup mayonnaise
1/4 cup sugar
3 tbsp. vinegar

Fry bacon strips until crispy, crumble and set aside.

Chop broccoli flowerettes and onions and put in bowl.

Add raisins,cashews,dressing and refrigerate for at least 2 hours.

Add crumbled bacon just before serving.

2-Alternate Recipe

Ingredients:

4 cups broccoli flowerettes
1/2 cup red onion
1 small can sliced olives
1 cup cashews
1 small can mandarine oranges

Dressing:

1 cup mayonnaise
2 tbsp. lemon juice
2 tbsp. soya sauce
salt and pepper to taste

Chop broccoli and onion and put in bowl.

Add all other ingredients and refrigerate.

Serve when cool.
