Broccoli Cashew Salad

One thing to remember when making these dishes is to keep the cashew pieces fairly large-halving them works well.<<>> This way the flavor of the nut stands out and can be easily tasted. Otherwise they sort of get lost in the salad and you don't really taste them. I would also recommend you ad the cashews just before serving so they don't get too soggy. For added flavor you can use flavored or salted nuts as well.
Here are two different versions of a this salad: The first recipe includes raisins and bacon and the standard dressing normally used for a broccoli salad. The second recipe has a more exotic flavour to it using mandarine oranges and a less sweet more tangy dressing.
1-Standard Recipe
Ingredients:
4 cups broccoli flowerettes 1/2 cup red onion 6 slices bacon 1/2 cup raisins 1/2 cup cashews
Dressing:
1 cup mayonnaise 1/4 cup sugar 3 tbsp. vinegar
Fry bacon strips until crispy, crumble and set aside.
Chop broccoli flowerettes and onions and put in bowl.
Add raisins and dressing and refrigerate for at least 2 hours.
Add crumbled bacon and cashews just before serving.

2-Alternate Recipe
Ingredients:
4 cups broccoli flowerettes 1/2 cup red onion 1 small can sliced olives 1 cup cashews 1 small can mandarine oranges
Dressing:
1 cup mayonnaise 2 tbsp. lemon juice 2 tbsp. soya sauce salt and pepper to taste
Chop broccoli and onion and put in bowl.
Add olives and oranges and refrigerate for at least 2-3 hours.
Add cashews just before serving.
