Broccoli Cauliflower Salad

"3 ways to make a broccoli cauliflower salad, try one or all!"



I like this mixing of cauliflower and broccoli for a salad as it is just so good for you I figure a little fatty dressing is a just reward for eating so healthy.<<>>

Some people like to slightly cook the broccoli and cauliflower before making a salad with it but I like them raw.

If you do decide to cook them I would suggest steaming them just for a minute or two-enough to take away the hardness but still be crunchy.


1-Recipe for Broccoli Cauliflower Salad

I have included 2 popular easy dressing recipes usually added to this dish.

For the creamy dressing if you use yogurt rather than mayonnaise it can be a little bland, so I would suggest adding some fruit and/or nuts to complement it.

For the oil based dressing you can use any oil you prefer such as olive or canola. Any flavour of vinegar will do fine as well.

Ingredients:

2 cups broccoli flowerettes
2 cups cauliflower tops-chopped
1/2 cup chopped red onion
2-4 hard boiled eggs-peeled and chopped
1 chopped bell pepper

Dressing-Creamy:

Broccoli Cauliflower Salad

1 cup mayonnaise or yogurt, or mix 50/50
1/4 cup vinegar
1/4 cup sugar

Dressing-Oil Based:

1/2 cup salad oil
2-4 tbsp. wine vinegar
1/2 tsp. basil
salt to taste

Dressing-Other:

Use your favorite bottled dressing such as Ranch or Italian.


Cut broccoli and cauliflower heads into bite size pieces. Add all other ingredients and mix in dressing.

Refrigerate salad for a few hours before serving.

2-Bacon Broccoli Cauliflower Salad

This bacon broccoli cauliflower salad recipe can be made with regular bacon or turkey bacon, back bacon, or bacon-bits. If you don't want to make the dressing, you might try a bottled dressing like bacon ranch.

Ingredients

1 bunch broccoli
1/2 cauliflower head
1 small red onion
1-2 sticks celery
1 lb. bacon

Dressing:

1 cup mayonnaise
1/4 cup vinegar
1/4 cup sugar

Cook bacon until crisy and crumble into small pieces, and set aside.

Cut up broccoli, cauliflower, onion and celery and put into salad bowl.

Add dressing, toss salad and refrigerate at least 2 hours.

Add crumbled bacon just before serving.

3-Broccoli Cauliflower Salad With Cheese

Ingredients:

1 broccoli head
1 cauliflower head
1 red onion-sliced and diced
1-2 carrot sticks-sliced
1-2 celery stalks-sliced
1 bell pepper-sliced and diced
500g cheese-any kind-grated
1 can whole mushrooms

Dressing:

3-cheese Ranch Dressing, to taste.

Cut up vegatables, drain and add mushrooms, add desired amount of dressing and mix.

Grate cheese and add to top of salad.

Refridgerate salad until cool
