Broccoli Mushroom Onion Salad
This simple broccoli mushroom onion salad is a good basic dish. You can add any of your favorite vegetables, fruits or nuts to really give it a unique blend of flavors. The tasty dressing really brings the different flavors together, acting as a marinade as well. As for the mushrooms,if you don't want to use the plain white button ones you could use any edible variety you may have access to such as shitake, oyster, portabello, morrell, or pine.
Ingredients: 1-2 bunches broccoli 2 green onions 1 bell pepper 1 cup sliced mushrooms Dressing: 1 cup salad oil 1/4 cup wine or cider vinegar 1/4 cup sugar 1 tsp. celery seed 1 tsp. onion powder 1 tsp. paprika salt to taste Cut up broccoli flowerettes into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes. Chop onions, mushrooms, pepper and mix with dressing. Let stand at least 2 hours or overnight.
