Broccoli Raisin Bacon Salad
The main thing to consider when making a broccoli raisin bacon salad is that the bacon will get soggy if undercooked or added to the salad a few hours before serving. Try to use the leanest cut you can find. Back bacon is ideal for this recipe but can be pricey. I prefer turkey bacon for its lower fat content. Bacon bits can also be used.
Ingredients: 4 cups broccoli flowerettes 1/2 cup red onion or 2-4 green onions 2 celery sticks 1/2 lb. bacon 1/2 cup raisins 1/2 cup chopped nuts or sunflower seeds(optional) Dressing: 1 cup mayonnaise or mix 50/50 with yogurt 1/4-1/3 cup vinegar or lemon juice 1/4 cup sugar or sweeten to taste
Any bottled dressing could be substituted such as Bacon Ranch. Fry, drain and crumble bacon and set aside. Chop broccoli flowerettes, onion and celery and add to bowl. Add all other ingredients except bacon, mix well and refrigerate for at least 2 hours. Add crumbled bacon just before serving.
