Broccoli Raisin Cashew Salad

When making this broccoli raisin cashew salad don't chop up the cashews too small. They will be easier to taste if they are whole or halved. For a little variety try mixing in some other nuts with the cashews. Walnuts and hazelnuts are popular additions to this salad.

Ingredients:

1-2 bunches broccoli
1 cup raisins
1 cup cashews-halved
1/2 cup chopped red onion
1 chopped bell pepper-any colour

Dressing:

3/4 cup mayonnaise
2-4 tbsp. vinegar
2-4 tbsp.sugar

Cut up broccoli flowerettes into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes.

Add all other ingredients, dressing and mix well.

Refrigerate for 2-3 hours, toss salad again and serve.
