Broccoli Salad Recipe

My favorite broccoli salad recipe is always the most recent one I have made. They are never the same as I always try something a little different each time I make it. You will find links to some of my favorite ones further down the page as well as the right hand column.

You either like broccoli or you don't. Some people who don't sometimes find what they really don't like is cooked broccoli.

Put it in a salad raw with some sweet dressing and other goodies and just watch them gobble it up!

I like to add lots of different ingredients to a salad like this. Things like crunchy nuts of all kinds, seeds, fruits, cheeses, vegetables, anything really.

As for dressings there is the basic one shown below or you can use a store bought bottled one or make an oil/vinegar one as well. You will find more through the site.

Ingredients:

1-2 heads broccoli
1/2 cup chopped red onion
6-8 slices bacon
1 cup shredded cheese

Dressing:

1 cup mayonnaise
1/4 cup vinegar
1/4 cup sugar

Directions:

Fry bacon until crispy, drain grease and set aside.

Cut up broccoli tops into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes.

Give the leftover stem to your kitchen
helper.

Add onion, cheese and dressing.

Refrigerate 2-3 hours or overnight.

Crumble bacon into bits, add to bowl and toss salad just before serving.

This salad was made with a few extra ingredients: celery, olives, and sunflower seeds.

Here are a few alternatives for dressings:

Miracle Whip-instead of mayonnaise

Yogurt-usually mixed with mayonnaise 50/50.

Vinegar-any type will do such as apple cider, red wine or any flavoured.

Lemon juice-can be used with/instead of vinegar.

Sugar-As a a lot of the broccoli recipes on this site use sugar in the dressing you may want to consider Stevia, a natural sweetener. A good site for information on this is www.quick-weightloss-solutions, a site about healthy eating alternatives.

If you don't want to make a dressing just add your favorite bottled dressing such as Ranch or French.
