Broccoli Slaw Recipes
Broccoli slaw recipes are usually made with the stalks only but I prefer to use the tops as well. You can use a food processor, mandoline slicer, cheese grater, or a knife to finely shred, slice or julienne the whole broccoli.I use a mandoline slicer with the julienne attachment. There is usually a thick piece left over but I just cut it up and throw it into the mix. I use the same attachment with the carrot and red onion. There are many optional ingredients for this salad, things like nuts, raisins, dried fruit, etc. To make it simple I just added some raw trail mix to the salad, giving it some extra crunch and flavour. Ingredients: 2 average sized broccoli heads with stems attached 1-2 carrots 1/4 cup red onion 1.5 cups trail mix
Dressing: 1/2 cup mayonnaise 2-3 tbsp. sushi vinegar 1 tbsp. mustard 1 tsp.salt 1 tsp.Pepper 1 tsp. sugar(optional) Take the broccoli and peel a thin layer from the stalk section. Disgard peelings. Peel the carrots and onion as well. Shred the brocolli/carrot/onion into thin pieces using whatever method you have available. You can use a food processor, mandoline slicer, cheese grater or a knife. Whatever you use cut the veggies quite thin. Put salad into a large bowl, add dressing and mix well. The dressing will seem to be a bit "dry" but the salad will produce liquid as it sits. Let it sit for a couple of hours or overnight, mix again and serve. Here is another creamy dressing option as well as some oil/vinegar dressings you can use that work well in broccoli slaw recipes: 1-Creamy: 1/2 cup mayonnaise 1 tbsp. vinegar or lemon juice 1 tbsp. sugar 1 tsp. mustard powder 1 tsp.celery seed 1 tsp. each salt & pepper 2-Oil/Vinegar: 1-Standard Oil/Vinegar Dressing: 1/3 cup salad oil 1/3 cup apple cider vinegar 2 tbsp. sugar 1 tsp. mustard powder 1 tsp. celery seed 1/4 tsp. garlic powder(optional) 1/2 tsp. salt 1/2 tsp. pepper 2-Brown Sugar Dressing: 2 tbsp. salad oil 1/4 cup(4 tbsp.) white vinegar 1 tbsp. white sugar 2 tbsp. brown sugar 1 tsp. mustard powder 1/2 tsp. celery seed 1/2 tsp. each salt & pepper
