Broccoli Walnut Salad
"One standard and one slightly different way to make a broccoli walnut salad."
Broccoli salads always go well with nuts & raisins. That's what I have used for the first recipe here.<<>> The dressing is also a standard one but you can always use a bottled one if you desire. The mayonnaise can be substituted with yogurt but you may have to reduce the vinegar as it tends to get runny. A 50/50 mix of yogurt and mayonnaise is also an option, and you could also use a low fat sour cream instead of the mayo.
If you are not a big fan of bacon because of the fat, sodium and nitrates you can try bacon that has been sodium reduced, center-cut, and uncured. Another option is turkey bacon which is lower in fat and it is now possible to get no-meat vegan-style bacon.
1-Standard Recipe
Ingredients:
4 cups broccoli flowerettes 1/2 cup red onion 1-2 stalks celery 1/2 cup raisins 1 cup chopped walnuts 6-8 slices bacon
Dressing
1 cup mayonnaise 1/4 cup vinegar 1/4 cup sugar
Cook bacon until crispy, crumble and set aside.
Chop broccoli,onion and celery and put in salad bowl.
Add raisins,walnuts and dressing and toss salad.
Refrigerate for at least 2 hours before serving.
Add crumbled bacon just before serving.

2-Alternate Recipe
Ingredients:4 cups broccoli flowerettes 1/2 cup red onion 1-2 carrots 1 bell pepper 1-2 celery sticks 1 small can sliced olives 1 cup walnuts-whole,halved or chopped 1 small can mandarine oranges Dressing: 1 cup mayonnaise 4 tbsp. lemon juice 4 tbsp. soya sauce 1/4 cup sugar salt and pepper to taste Chop broccoli flowerettes, onion,carrots,celery and bell pepper into small pieces and put into salad bowl. Add walnuts, oranges and olives to bowl and mix well. Add dressing,toss salad and cool in refrigerator for a few hours to let flavours blend.
