Chinese Chicken Salad Recipe
"A chinese chicken salad recipe made with mai fun noodles."
For this recipe I have used spinach for the greens. You can use other greens if you wish, just wait until serving salad before adding them.<<>>The dressing is a sweet, spicy one made with peanut butter. If you wish you can add more nuts for crunchiness. The mai fun noodles can be substituted with chow mein noodles or a package of ramen noodles added to the salad raw. Make sure you let the salad sit with the dressing for an hour allowing the noodles to soften a bit.
Ingredients: 1 cooked chicken breast-sliced and chopped(about 1 cup chopped meat) 1 carrot-grated 1 celery stalk-thinly sliced 2 green onion-chopped 1/2 bell pepper-chopped 1 mai fun noodle stick(rice vermicelli) 3 cups chopped baby spinach
Dressing: 3 tbsp. rice vinegar 1 tbsp. sesame oil 2 tbsp.crunchy peanut butter 2 tbsp hoisin sauce 1 tsp.brown sugar 1 tsp. grated ginger 1 tsp hot chili paste or hot sauce 1 tsp. lemon juice Combine chicken and all vegetables but the spinach into a large bowl. To cook the mai fun noodles crumble the noodles into a small bowl. Break up all the chunks into separate noodle pieces. Heat up a frying pan with a little cooking oil and add the noodles when oil is hot. They will puff up when heated so stir them well and move them to a colander when slightly browned. Let them cool in the colander and add them to the salad bowl, leaving the smaller oil soaked pieces in the colander. Add dressing to the salad and toss well. Cover bowl with food wrap and refrigerate 1 hour. Add chopped spinach to salad just before serving. Toss salad well and transfer to a smaller bowl or salad plate.
