Crab Salad Sandwich
I would prefer to make this crab salad sandwich with fresh crab like the Box Crab I'm holding in the picture but these critters can't be found in any local grocery store. These crabs don't make it to the freezer to take home as they make the quicker journey to the crab pot and then to our dinner plates!

Dungeness crab can be bought in most grocery stores here on Vancouver Island. I generally don't buy fresh seafood in the grocery stores here as there are some good local fish markets in town as well as local fishermen who sell their catch at the dock.You can use imitation crab for a crab salad sandwich and this is a good alternative for people who can't eat shellfish. This product is made from Pollock which is a white fish which has been formed and shaped to resemble crab meat. As I'm going to be adding other ingredients to the crab meat and making a sandwich spread out of it I'm quite happy to use a good brand of canned crab. I find the flavour to be better than imitation crab and it only takes a few seconds to open up a can. Ingredients: 1 can (120g) crab meat-drain water out 1/4 cup bell pepper-sliced and chopped 2 green onions-chopped 1 clove garlic-grated 1 radish-grated 1/4 cup chopped celery 1 tsp. capers-chopped lettuce, greens or spinach Dressing: 3 tbsp. cream cheese 1 tsp. lemon or lime juice 1 tsp. chili paste(hot) 1 pinch paprika 1 pinch coriander In a small bowl fold cream cheese into lemon juice until smooth. Add chili paste, spices, and all other vegetables except lettuce. Mix well and add pepper if desired. You shouldn't need any salt if using capers. Make sure the mix isn't too runny before adding crab. If it is add more cream cheese. Drain the crab meat well of water before adding. If it's too runny it will not sit well in your sandwich. Garnish bread with lettuce, add crab salad mix and serve.

This sandwich spread goes well on toasted sourdough squares melted under your oven broiler with cheese shredded over top like the ones pictured here.

It makes a great filling for mushroom caps as well. Cook the same as the sourdough squares.
