Creamy Coleslaw Recipe

The biggest challenge for a creamy coleslaw dressing is making one that won't become too runny after it sits for a day.

This is an issue found especially when using non or low-fat mayonnaise, yogurt or sour cream as the dressing base.

I have found using whole mayo, yogurt or sour cream in smaller amounts will reduce the amount of liquid in your dressing and give you a nice tasty salad.

Ingredients:

1/2 head cabbage-shredded
1 carrot-grated
1/2 cup red onion-chopped

These 3 ingredients will give you a good basic tasty coleslaw. You can always add other ingredients to make it more interesting. Here are a few to consider:

Celery
Bell pepper-any colour
Green onion
Broccoli
Any fruit you may have
Any nuts or seeds, even trail mix
Fresh herbs
Pickles-finely chopped

Dressing:

For the dressing below you can substitute sour cream or yogurt for the dressing or mix either one 50/50 with the mayonnaise.

1/2 cup mayonnaise
1 tbsp. vinegar or lemon juice
1 tbsp. sugar
1 tsp. mustard powder
1 tsp.celery seed
1/2 tsp. each salt & pepper

Shred cabbage into a large bowl. For shredding tips see This Page. Add grated carrot, chopped onion and any other ingredients from the list above.

Mix dressing ingredients in a small bowl until sugar is dissolved. Add to salad and mix well. Transfer to a smaller bowl , cover and refrigerate. Stir again before serving.
