Greek Chicken Salad Recipe

This greek chicken salad recipe makes one of the tastiest sandwiches ever. The recipe calls for 1 cup of cooked chicken for which I used 1 medium sized chicken breast. Of course you can always use any part of the chicken you wish.

You don't have to use every ingredient either. Not everybody has hot pickled banana peppers in their refrigerator. The feta cheese can be substituted with any cheese you may have. Even the lemon/lime juice can be replaced with any other fruit juice if needed.

Ingredients:

1 cup cooked chicken-finely chopped
2 green onions-chopped
6-8 medium black olives-sliced
2 tbsp. chopped hot banana peppers
1/2 stick celery- finely chopped
1/4 cup bell pepper-chopped
1/4 cup feta Cheese-crumbled
1 pinch oregano
salt & pepper to taste

Dressing:

2 tbsp. mayonnaise
2 tsp. lemon or lime juice

Combine all ingredients and mix well. season with salt, pepper and oregano to taste. Refrigerate immediately if not using right away.

Makes 2-4 sandwiches.
