Shrimp and Broccoli Salad
This simple shrimp and broccoli salad is best made with fresh peeled and cooked shrimp. Canned shrimp will work also, as will frozen. You could also use prawns, scallops, or a mix of various seafoods. Make sure to cook raw seafood well and know it is safe for consumption. Ingredients: 1-2 bunches broccoli 1 cup shrimp 2 chopped green onions 1/2 cup chopped celery 1 chopped bell pepper
Dressing: 1 cup mayonnaise 1/4 cup lemon juice 1/4 cup sugar 1 tsp. dill
Cut up broccoli flowerettes into bite-sized pieces, leaving just a little stem. Cut up enough for about 4 cups of flowerettes. Add all other ingredients and dressing. Toss salad and refrigerate for 2-3 hours.
